Whoopie Pies

I no sooner got my last post posted and I received 2 e-mails for the whoopie pie recipe.

So to satisfy your sweet tooth here you are. This recipe came from my Grandmother’s recipe box and has been a family treat while I was growing up, then my children and now my granddaughter.

This is also quick and a huge hit for bake sales, or the children’s school parties.

 

Whoopie Pies

Cake part:

Cream together in a large bowl:

  • 2 eggs
  • 1 cup sugar
  • 6 Tbl. vegetable shortening
  • 1 tsp. vanilla

In a second bowl mix together:

  • 2 cups flour
  • 1½ tsp. baking powder
  • 5 Tbl. baking cocoa
  • 1 tsp. salt

Alternate above with 1 cup milk to creamed mixture. Use a tablespoon and drop mixture onto cookie sheet lined with parchment paper. Bake at 425°f for 8-10 minutes. Cool on cookie racks.

 

Filling:

Cream together and beat until fluffy

  • ¾ cup vegetable shortening
  • ½ cup + 1 Tbl. marshmallow fluff
  • ½ cup confectioners sugar
  • and a little vanilla to wet it

 

*note: you can also use 1 chocolate cake mix plus ¾ cup flour for cake part. Follow the box directions.

You can also use other bread recipes such as banana or pumpkin for the cake part. And try adding some flavoring to the filling. Lemon is popular around here and so is vanilla cake with chocolate filling.
